Creamy white bean sauce is a versatile culinary delight that adds a velvety touch to various dishes. With a smooth texture and rich flavor, it can be used as a pasta sauce, dip, soup base, or vegetable topping. Ingredients:

- 1 can (15 oz) of white beans, drained and rinsed

- 4 cloves of garlic, minced

- 2 tablespoons olive oil

- 1/2 cup vegetable broth (or water)

- 1 tablespoon lemon juice

- 2 tablespoons nutritional yeast

- Salt and pepper to taste

- Optional: fresh herbs (such as parsley or basil) for garnish


Instructions:

1. In a medium-sized saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and slightly golden.


2. Add the white beans to the saucepan and stir to coat them with the garlic and oil. Cook for another 2-3 minutes to heat the beans.


3. Pour in the vegetable broth (or water) and bring the mixture to a simmer. Allow it to cook for about 5 minutes, allowing the flavors to meld together.


4. Remove the saucepan from the heat and let the mixture cool slightly. Transfer it to a blender or food processor.


5. Add the lemon juice, nutritional yeast, salt, and pepper to the blender with the bean mixture. Blend until smooth and creamy, adding more vegetable broth or water if needed to achieve the desired consistency.


6. Taste and adjust the seasoning as needed, adding more salt, pepper, or lemon juice according to your preference.


7. Once the sauce is smooth and creamy, use it how you'd like. Use it as a pasta sauce, dip, or sauce for roasted vegetables. Store any leftovers in an airtight container in the refrigerator for up to 3-4 days.
