Vegan Scrambled "Eggs" Moong Dal

Ingredients:


- 1 cup split yellow mung beans, soaked overnight

- 1 - 1 1/4cup unsweetened non-dairy milk

- 1 tsp black salt (Kala Namak)

- 1/2 tsp salt

- 2 tbsp olive oil or coconut oil, plus extra for cooking

- 1/4 tsp turmeric

- 1/2 tsp garlic powder

- 1/2 tsp onion powder

- 3 tbsp nutritional yeast

- Pepper, to taste

- Paprika, for serving


Instructions:


1. Drain and rinse the soaked mung beans. In a blender, combine the mung beans, milk, black salt, salt, olive oil (or coconut oil), turmeric, garlic powder, onion powder, and nutritional yeast. Blend until smooth and pourable.


2. Heat a non-stick pan over medium heat and add a little oil.


3. Pour the mixture into the pan and use a spatula to stir and move it around. Cover and cook for 1-2 minutes.


4. Once the mixture starts to dry out in parts, stir and move it around to create a scrambled texture. Cover and cook for another 2 minutes.


5. Season with salt, pepper, and paprika to taste.


6. Serve this delicious mung bean scrambled "eggs" with mix-ins like tomatoes, green onions, mushrooms, or vegan cheese for a delightful meal. Enjoy!
