Ingredients:
- 2 cups of canned coconut milk (full-fat gives the best texture- no guar gum)
- 2 tablespoons of store-bought coconut based yogurt (ensure it contains live cultures- cocojune is my favorite)
Instructions:
1. **Heat the Coconut Milk:** Pour the coconut milk into a saucepan and gently heat it over medium heat until it reaches about 110°F (43°C). You can use a thermometer to check the temperature.
2. **Mix in the Yogurt Starter:** Once the coconut milk is warm, remove it from the heat. Stir in the 2 tablespoons of store-bought yogurt. Ensure it is thoroughly mixed so the cultures are evenly distributed.
3. **Incubate the Yogurt:** Pour the mixture into a clean jar or container with a lid. Cover it and keep it in a warm spot, around 100°F (38°C), for about 12 to 24 hours. You can use a yogurt maker, an oven with the light on, or a heating pad to maintain this temperature.
4. **Check the Consistency:** After the incubation period, check the yogurt's thickness. It should have a slightly tangy flavor. If it's not thick enough, you can incubate it a little longer.
5. **Refrigerate:** Once it's ready, refrigerate the yogurt for a few hours to fully set and improve the flavor.
6. **Enjoy:** Your homemade coconut yogurt is now ready to enjoy! You can sweeten it with honey, maple syrup, or fresh fruit if desired.
Remember, homemade yogurt can vary in texture and tanginess depending on the coconut milk and yogurt starter you use. Feel free to experiment with different brands to find the combination you like best.
