Ingredients:
- 1 block of super firm pressed tofu
- 1/2 cup of silken tofu
- 1 tablespoon of oil (such as olive or vegetable oil)
- 1/2 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 teaspoon of turmeric
- 1/2 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1/2 teaspoon of black salt
- Salt and pepper to taste
- Optional toppings: chopped fresh herbs (such as chives or parsley), nutritional yeast, hot sauce
Instructions:
1. Start by crumbling the super firm pressed tofu into small pieces using your hands. Set it aside.
2. In a separate bowl, mash the silken tofu with a fork until smooth. Set it aside.
3. Heat the oil in a large skillet or frying pan over medium heat.
4. Add the diced onion and bell pepper to the pan and sauté until they become soft and translucent, about 5 minutes.
5. Add the minced garlic to the pan and cook for an additional minute.
6. Add the crumbled super firm tofu to the pan and stir well to combine with the vegetables.
7. Sprinkle the turmeric, cumin, black salt and paprika over the tofu mixture. Stir to evenly coat the tofu and vegetables with the spices.
8. Cook for about 5 minutes, stirring occasionally, until the tofu starts to brown slightly.
9. Add the mashed silken tofu to the pan and mix it into the scramble.
10. Continue cooking for another 2-3 minutes until the silken tofu is heated through and well combined with the rest of the ingredients.
11. Season with salt and pepper to taste.
12. Remove the tofu scramble from the heat and serve hot.
13. Garnish with your choice of optional toppings, such as chopped fresh herbs, nutritional yeast, or hot sauce.
