Ingredients:
- 1 large eggplant, cut into chunks or cubes

- 1 tablespoon coconut aminos, tamari, or soy sauce
- 1/2 to 1 tablespoon gochujang paste
- 2 scallions, chopped

- 2 cups cauliflower rice
- EVOO for sautéing
- 2 teaspoons fresh minced garlic
Instructions:
1. Preheat the air fryer to 375°F (190°C).
2. In a mixing bowl, combine agave nectar, EVOO, salt, coconut aminos (or soy sauce), and gochujang paste. Divide. Pour over eggplant and toss well to coat.
