Sweet and Spicy Eggplant with Garlic Cauliflower Rice

The combination of tender roasted eggplant coated in a sweet and spicy glaze, paired with fragrant garlic-infused cauliflower rice, creates a delightful culinary experience. Ingredients:


- 1 large eggplant, cut into chunks or cubes

- 2 tablespoons raw agave nectar - honey or maple syrup can be used as alternatives

- 1 tablespoon EVOO or sesame oil

- 1/2 teaspoon salt

- 1 tablespoon coconut aminos, tamari, or soy sauce

- 1/2 to 1 tablespoon gochujang paste

- 2 scallions, chopped

- Sprinkle of white sesame seeds for garnish

- 2 cups cauliflower rice

- EVOO for sautéing

- 2 teaspoons fresh minced garlic


Instructions:


1. Preheat the air fryer to 375°F (190°C).


2. In a mixing bowl, combine agave nectar, EVOO, salt, coconut aminos (or soy sauce), and gochujang paste. Divide. Pour over eggplant and toss well to coat.


3. Place the seasoned eggplant in the air fryer basket in a single layer. Cook for about 15-20 minutes, shaking the basket halfway through, until the eggplant is tender and slightly caramelized.


4. While the eggplant is cooking, prepare the cauliflower rice. In a separate pan, heat some EVOO over medium heat. Add the fresh minced garlic and sauté until fragrant.


5. Add the cauliflower rice to the pan and cook for about 5-7 minutes, or until tender. Season with salt and pepper to taste.


6. Once the eggplant is done cooking, remove it from the air fryer.


7. Add the scallions to the remaining sauce and drizzle over the eggplant. Toss to combine.


7. Serve the sweet and spicy air-fried eggplant with the garlic cauliflower rice. Garnish with additional chopped scallions (if desired) and white sesame seeds. Enjoy your delicious and healthy meal!
