Ingredients:


- 1/2 tsp oil (omit for oil-free)

- 2 cups shiitake mushrooms, sliced ~1/4 inch thick (remove stiff stalks)

- 1-2 tbsp coconut aminos

- 1 ½ tsp agave syrup

- 1 tsp garlic powder

- 1/2 tsp cumin

- 1/2 tsp smoked paprika

- 1/2 tsp ground black pepper

- Dash of salt


Instructions:


1. Preheat your oven to 375°F.


2. Place a large, rimmed, oven-safe skillet (cast iron preferred) over medium heat.


3. In a medium bowl, toss together all the ingredients until the mushrooms are well coated.


4. Once the skillet is hot, add the oil (if using), followed by the mushroom mixture.


5. Sauté, stirring frequently, for 2-3 minutes.


6. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the mushrooms are browned, dried out, and slightly crispy.


7. Remove and place the mushrooms on a paper towel to absorb any excess liquid.


8. Store any cooled leftovers in a loosely covered jar in the refrigerator for 3-4 days to maintain some airflow. Reheat in a 350°F oven or on the stovetop over medium heat until hot. They can also be enjoyed at room temperature or slightly chilled. Best enjoyed fresh.
