Ingredients:


- 5 large ripe tomatoes, quartered

- 1 medium Vidalia onion, quartered

- 10-12 cloves of garlic, peeled

- 2 tablespoons olive oil

- Salt and pepper to taste

- 1 cup coconut milk (plus extra for swirls)


Instructions:


1. Preheat the Oven: Preheat your oven to 400°F (200°C).


2. Prepare the Vegetables:

   - In a large bowl, combine the halved tomatoes, quartered Vidalia onion, and peeled garlic cloves.

   - Drizzle with olive oil and sprinkle with salt and pepper. Toss everything to ensure the vegetables are well coated.


3. Roast the Vegetables:

   - Spread the vegetable mixture on a baking sheet in a single layer.

   - Roast in the preheated oven for about 25-30 minutes, or until the tomatoes are soft and caramelized, and the garlic is golden and fragrant.


4. Blend the Soup:
