If you're on the hunt for a healthy yet indulgent treat, raw brownie bars are the perfect answer. These no-bake delights combine the rich flavors of cocoa, the natural sweetness of Medjool dates, and the subtle crunch of raw nuts like almonds, walnuts, or pecans. Infused with a touch of vanilla, a hint of Himalayan salt, and aromatic Ceylon cinnamon, these bars are simple to make and satisfyingly delicious. The use of a food processor transforms the ingredients into a sticky, cohesive mixture that sets beautifully in the fridge. They are an excellent option for anyone who craves the fudgy texture of traditional brownies but prefers a raw, wholesome twist. Enjoy them as a quick snack, a dessert, or an on-the-go energy boost. Ingredients:

- 3/4 cup raw almonds, walnuts, or pecans

- 1/3 cup unsweetened shredded coconut

- 1/3 cup unsweetened cocoa powder

- 1 1/3 cups packed Medjool dates, pitted, softened if necessary, and chopped

- 1 teaspoon vanilla extract

- 1/8 teaspoon Himalayan salt

- 1/4 teaspoon Ceylon cinnamon


Instructions:


1. **Prepare the Dates:** If your Medjool dates are not soft, soak them in warm water for about 10 minutes. Drain them well before using.


2. **Process the Nuts:** In a food processor, add the almonds, walnuts, or pecans. Pulse until they become a coarse meal. Be careful not to over-process into a butter.


3. **Add Cocoa and Coconut:** Add the unsweetened shredded coconut and cocoa powder to the processor. Pulse a few times until well combined with the nut mixture.


4. **Mix in Dates and Flavoring:** Add the chopped dates, vanilla extract, Himalayan salt, and Ceylon cinnamon to the processor. Process until the mixture becomes sticky and holds together. You may need to scrape down the sides occasionally.


5. **Form the Bars:** Transfer the mixture to a lined or greased baking dish or pan. Press it down evenly with your hands or a spatula to form a smooth, even layer.


6. **Chill:** Refrigerate the mixture for at least 1-2 hours, allowing it to firm up.


7. **Cut and Serve:** Once chilled, cut into bars or squares and serve. Store any leftovers in the refrigerator.
