Instructions:


1. Combine Ingredients: In a medium saucepan, combine the chopped plums, apple cider vinegar, coconut sugar, coconut aminos, ginger, garlic, red chili flakes (if using), and Chinese five spice (if using). Heat the mixture over medium-high heat until it reaches a gentle boil.


2. Simmer: Once boiling, reduce the heat to medium-low and let the mixture simmer uncovered for about 20-25 minutes, or until the plums are tender and have broken down. Remove the pan from heat.


3. Purée: Using an immersion blender, purée the mixture directly in the saucepan until smooth. Alternatively, allow it to cool slightly and transfer it to a blender to achieve a silky texture.


4. Thicken the Sauce: Return the puréed mixture to medium-high heat and bring it back to a quick boil. Reduce the heat to medium-low again, stirring frequently to prevent sticking. Let it simmer for an additional 20 minutes, until it thickens to a sticky jam-like consistency.


5. Cool and Store: Remove the sauce from heat and let it cool. This delightful plum sauce can be stored in the refrigerator for up to 10 days. For longer storage, portion it into glass jars and freeze; it will keep in the freezer for about 5 months. Just remember to leave 1-2 inches (2.5-5 cm) of space at the top of each jar to allow for expansion.
