How to Make Refrigerator Pickled Okra Without the Hassle of Canning

Ingredients:

- 1 ½ pounds fresh okra, about 3 inches in length, washed and dried

- 4 garlic cloves, peeled

- 2 tablespoons dried dill weed or 6 to 8 sprigs of fresh dill

- 2 teaspoons sugar

- 2 teaspoons Kosher salt

- 1 ½ tablespoon whole peppercorns


Instructions:

1. Trim the stem ends of the okra (if needed), ensuring they fit into your chosen jar(s) without being too tall.


2. Divide the garlic cloves, dried red chile peppers, and dill between the jars, placing them at the bottom.


3. Pack the okra tightly into the jars, vertically if possible, to maximize space.


4. In a medium saucepan, combine the apple cider vinegar, sugar, Kosher salt, mustard seed, and peppercorns. Bring the mixture to a gentle boil, stirring until the sugar and salt dissolve completely.


5. Carefully pour the hot brine over the okra, dividing amongst the jars. Fill remaining space with water leaving 1/2" room at the top.


6. Allow the jars to cool to room temperature before sealing them tightly with lids.


7. Place the jars in the refrigerator and let the flavors meld for at least 2 to 3 days before enjoying.


8. The pickled okra can be stored in the refrigerator for up to 2-3 months. The longer they sit, the more the flavors will develop.


Note: The pickled okra will taste best after a few days, so be patient and savor the tangy goodness that awaits you! Enjoy as a snack, add to salads, or use as a zesty garnish to elevate your dishes.
