Pasta e fagioli, often affectionately referred to as "pasta fazool," is a comforting Italian dish that beautifully marries the flavors of pasta and beans in a rich broth. Traditionally made with cannellini or borlotti beans, this hearty soup is infused with aromatic vegetables like onions, carrots, and celery, along with garlic and herbs for an extra punch of flavor. The choice of pasta can vary, but small shapes like ditalini or elbow macaroni are commonly used, soaking up the savory broth. Each family has its own variation, making it a cherished recipe passed down through generations. Perfect for chilly evenings, pasta e fagioli is not only delicious but also nutritious, making it a satisfying meal any time of year.



Ingredients:


- 6 ounces ditalini pasta (uncooked, approximately 1½ cups)

- 1 cup white onion, finely diced

- 2 cloves garlic, minced

- 4 cups vegetable broth

- 15 ounces fire roasted crushed tomatoes

- 4 roma tomatoes, chopped

- 8 ounces tomato sauce

- 4 tablespoons tomato paste

- 1½ cups carrots, finely chopped (about 2 medium carrots)

- ½ cup celery, chopped

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- 1 teaspoon ground cumin

- 1 teaspoon smoked paprika

- 15 ounces cannellini beans, rinsed and drained

- 15 ounces kidney beans, rinsed and drained

- 1 teaspoon salt

-1/4 teaspoon freshly ground black pepper


Instructions:


1. In a large skillet, heat approximately 3 tablespoons of water over medium heat. Sauté the diced onions for about 10 minutes, stirring occasionally until they become tender and translucent. Add the minced garlic and cook for an additional minute, allowing the flavors to meld beautifully.



2. Pour in the vegetable broth, then stir in the crushed tomatoes, chopped tomatoes, tomato sauce, tomato paste, chopped carrots, celery, oregano, basil, and cumin. Bring this mixture to a gentle boil.


3. Once boiling, add the uncooked ditalini pasta along with both varieties of beans. Reduce the heat to medium-high and let the soup simmer for 6 to 8 minutes, or until the pasta reaches an al dente texture.


4. Season the soup with salt and freshly ground black pepper. Give it a good stir, then taste and adjust the seasoning if necessary.


5. Serve this comforting soup hot, paired with crusty bread or warm breadsticks for the perfect finishing touch. Enjoy every spoonful of this flavorful and satisfying dish!
