Fluffy Pancakes with Caramelized Bananas: A Perfect Morning Delight


There's something undeniably comforting about waking up to the aroma of freshly cooked pancakes wafting through the air. And when those pancakes are perfectly fluffy and topped with sweet, caramelized bananas, it takes breakfast to a whole new level of deliciousness. In this blog post, we'll explore the magic of fluffy pancakes and the delightful addition of caramelized bananas. Get ready to treat yourself to a morning delight that will leave you craving more!


Pancake Ingredients:

- 1 tablespoon baking powder

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt

- 1 cup plant-based milk (I prefer extra creamy oat milk)

- 1 tablespoon apple cider vinegar

- 1 teaspoon cinnamon

- 1 tablespoon oil (plus more for cooking)

- 1 teaspoon vanilla extract


Instructions:

1. In a mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and cinnamon.

2. In a separate bowl, whisk together the plant-based milk, vanilla extract and apple cider vinegar. Let it sit for a few minutes to curdle, creating vegan buttermilk.

3. Add the vegan buttermilk and oil to the dry ingredients. Stir until just combined. Be careful not to overmix; a few lumps are okay.

4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil.

5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

6. Repeat with the remaining batter, adding more oil as needed.

7. Serve the pancakes warm with caramelized bananas on top.


Caramelized Bananas Ingredients:

- 2 ripe bananas, sliced

- 2 tablespoons vegan butter or coconut oil

- 2 tablespoons agave syrup (or your preferred sweetener)

- 1/2 teaspoon cinnamon (optional)

- Pinch of salt

- 2 tablespoons plant-based milk (such as almond, soy, or oat milk)


Instructions:

1. Heat a non-stick skillet or frying pan over medium heat.

2. Add the vegan butter or coconut oil to the pan and let it melt.

3. Once the butter or oil has melted, add the sliced bananas to the pan in a single layer.

4. Pour the agave syrup, cinnamon (if using), and a pinch of salt over the bananas.

5. Cook the bananas for about 2-3 minutes on each side until they become golden and caramelized.

6. Pour the plant-based milk into the pan and gently stir it with the bananas to create a caramel-like sauce.

7. Continue cooking for another minute or two until the sauce thickens slightly.

8. Remove from heat.

9. Serve the caramelized bananas as a topping for pancakes, oatmeal, ice cream, or enjoy them on their own.
