Ingredients:

- 1 tsp black salt or Kala Namak

- 1/2 tsp salt

- 2 tbsp olive oil

- 1/2 tsp onion powder

- 1 1/4 tsp baking powder


Instructions:


1. Rinse and drain the soaked mung beans.


2. In a food processor or blender, blend the mung beans with soy milk, black salt, regular salt, olive oil or coconut oil, turmeric, garlic powder, onion powder, baking powder, nutritional yeast, and tapioca starch until the mixture is smooth.


3. Heat a non-stick pan over medium heat and add a little oil.


4. Pour about 1/4 cup of the batter into the pan and cook for 2-3 minutes on each side until golden brown. Repeat the same process for the remaining batter.


5. Serve hot with your favorite vegan toppings.


Note: This recipe makes about 2-4 vegan omelettes, depending on the size. You can adjust the recipe accordingly to make more or less. Also, the black salt or Kala Namak is what gives the vegan eggs an egg-like flavor, so it's important not to skip this ingredient.
