Mediterranean Pasta Salad

Looking for a vibrant and nutritious meal prep option? This Mediterranean Pasta Salad is the perfect solution! Layered with fresh ingredients like crisp cucumbers, juicy cherry tomatoes, and savory Kalamata olives, this colorful salad bursts with flavor in every bite. Tossed in a zesty lemon dressing and complemented by air-fried tofu and dairy-free feta, it provides a satisfying balance of protein and healthy fats. Not only is it incredibly delicious, but it also keeps well in the fridge for up to five days, making it a convenient choice for busy weeks. Enjoy this delightful pasta salad as a quick lunch or a refreshing side dish at your next gathering!




Ingredients (per 32oz jar):


- 2 tbsp olive oil

- Salt and pepper (to taste)

- 1/4 tsp Italian herbs

- Juice from 1/2 lemon (fresh squeezed)

- 1/2 cup cucumber, chopped

- 1/2 cup cherry tomatoes, halved

- 1/4 cup pickled red onions

- 2-4 tbsp Kalamata olives, pitted and sliced

- 1/2 cup pasta of choice (cooked according to package instructions), cooled

- 1/3 cup air-fried tofu (seasoned to your preference), cooled

- Fresh herbs (such as parsley or basil, if desired)

- 1-2 tbsp dairy-free feta cheese (crumbled)

- Additional salt and pepper (for seasoning)


Instructions:


1. **Prepare the Pasta:**

- Cook your pasta according to the package instructions. Drain and let it cool.


2. **Prepare the Tofu:**

- If using plain tofu, season it with your choice of spices (such as garlic powder, paprika, or Italian seasoning) before air-frying. Air fry at 375°F (190°C) for about 10-15 minutes, or until golden brown.


3. **Layer the Ingredients:**

- In a clean 32oz jar, start by adding the olive oil to the bottom.

- Sprinkle in salt and pepper to taste and add the Italian herbs.

- Squeeze in the fresh lemon juice over the oil and seasoning.

- Add the chopped cucumber, halved cherry tomatoes next, and pickled red onions, layering them on top of the dressing.

- Follow with the sliced Kalamata olives.

- Carefully add the cooked pasta next, layering it evenly.

- Top the pasta with the air-fried tofu.

- If desired, add any fresh herbs for a burst of flavor.

- Finally, sprinkle the dairy-free feta cheese on top.


4. **Seal and Store:**

- Seal the jar tightly and store it in the refrigerator. This pasta salad will keep well for up 3-5 days.


5. **Serving:**

- When ready to eat, shake the jar to mix the ingredients and enjoy your Mediterranean Pasta Salad either cold or at room temperature.
