Maple Quinoa Granola

Homemade maple quinoa granola is a delicious and nutritious addition to your breakfast routine. Made with wholesome ingredients like rolled oats, quinoa, nuts, and seeds, this granola is sweetened with pure maple syrup for a natural touch of sweetness. The quinoa adds a delightful crunch and a boost of protein, making it a satisfying option for busy mornings. You can enjoy it with your favorite yogurt, milk, or as a topping for smoothie bowls. Best of all, it's easy to customize with your preferred mix-ins, such as dried fruits or chocolate chips, ensuring a unique and tasty treat every time.





Ingredients:


- 2 1/3 cups old-fashioned oats

- 1/2 cup uncooked quinoa, soaked

- 1 cup raw nuts (a mix of whole almonds and pecan halves)

- 2 tbsp sunflower seeds

- 1/4 cup chia seeds

- 2 teaspoons ground cinnamon

- 1/2 teaspoon pink Himalayan salt

- 1/3 cup pure maple syrup

- 3 tablespoons melted coconut oil

- 3 tablespoons molasses (not blackstrap)

- 2 teaspoons vanilla extract


Instructions:


  1. Soak your quinoa at least 2 hours before using.

  2. Preheat your oven to 325°f. Line a baking sheet with parchment paper.

  3. In a large mixing bowl, combine the oats, uncooked quinoa, raw nuts, sunflower seeds, chia seeds, ground cinnamon, and pink Himalayan salt.

  4. In a separate bowl, whisk together the maple syrup, melted coconut oil, molasses, and vanilla extract.

  5. Pour the wet ingredients over the dry ingredients and mix until everything is well coated.

  6. Spread the mixture evenly on the prepared baking sheet.

  7. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crispy.

  8. Remove from the oven and let cool completely. Once cooled, stir in your choice of mix-ins like chocolate chips or dried fruit.

  9. Store in an airtight container at room temperature. Enjoy!


This Maple Quinoa Granola recipe typically makes about 6-8 servings, depending on portion size. Each serving is roughly around 1/2 to 3/4 cup of granola. Enjoy it as a topping or on its own for a nutritious and delicious treat!
