Ingredients:


- 1 cup dry chickpeas, soaked overnight then cooked

- 1 avocado

- 1 rib celery, sliced

- 2 tbsp red onion, diced

- 1/4 cup red bell pepper, chopped

- 1/4 green apple, diced

- 2 tbsp unsweetened almond milk yogurt

- 1 tbsp lemon juice

- 2 tbsp hemp seeds

- Salt and pepper to taste


Instructions:


1. In a mixing bowl, mash the cooked chickpeas and avocado together until well combined.


2. Add the celery, red onion, red bell pepper, green apple, almond milk yogurt, lemon juice, and hemp seeds to the bowl.


3. Season with salt and pepper to taste.


4. Mix all the ingredients together until well combined.


5. Spread the avocado chickpea salad onto your favorite bread slices to make a delicious sandwich or use it as a filling for wraps or pita pockets.
