Lemon Pesto Pasta

Ingredients:


- 8 oz. pasta of your choice (such as spaghetti or fettuccine)

- 2 cups fresh basil leaves

- 1/3 cup pine nuts

- 2 cloves of garlic

- Zest and juice of 1 lemon

- 1/4 cup nutritional yeast

- 1/4 cup olive oil

- Salt and pepper to taste

- Optional: cherry tomatoes, chopped kale, or other vegetables of your choice


Instructions:


1. Cook the pasta according to package instructions until al dente. Drain and set aside.


2. In a food processor, combine the basil leaves, pine nuts, garlic, lemon zest, lemon juice, and nutritional yeast. Pulse until ingredients are finely chopped.


3. With the food processor running, slowly drizzle in the olive oil until the mixture comes together into a smooth pesto. Add salt and pepper to taste.


4. In a large mixing bowl, toss the cooked pasta with the lemon pesto until evenly coated. If desired, mix in cherry tomatoes, kale, or other vegetables.
