Ingredients:


- 1 pound King Oyster Mushrooms (450g)

- 1 Tablespoon Olive Oil (plus more for brushing)

- ¼ teaspoon Sea Salt

- ¼ teaspoon Ground Black Pepper

- ⅛ teaspoon Paprika

- 1 Tablespoon Avocado Oil (or EVOO)

- 3 Cloves Garlic (crushed)

- 1 Tablespoon Lemon Juice (freshly squeezed)

- 2 Tablespoons Fresh Dill (chopped)


Instructions:


1. Start by trimming the ends off the King Oyster mushrooms and slicing the stems into 1-inch thick discs.


2. Arrange the mushroom rounds on a baking tray and generously brush both sides with olive oil.


3. Sprinkle the tops with a blend of sea salt, ground black pepper, and paprika for added flavor.


4. Heat a cast iron skillet over medium-low heat and lightly coat it with olive oil.


5. Place the seasoned mushroom scallops in the skillet, seasoned side down, ensuring a satisfying sizzle upon contact.


6. While the first side is searing, season the other side with sea salt, ground black pepper, and paprika.


7. Cook for around 2 minutes, then flip, ensuring a golden-brown sear.


8. Add more oil if needed and repeat the process with the remaining scallops until all are seared.


9. In the same skillet, add the avocado oil and crushed garlic, cooking until fragrant and lightly golden.


10. Incorporate lemon juice and dill into the skillet, then turn off the heat.


11. Return all mushroom scallops to the skillet, coating them in the flavorful sauce.


12. Serve with a sprinkle of ground black pepper, fresh chopped dill, and lemon slices for a delightful presentation.
