Healthy berry almond crumble bars are a delightful treat that combines the sweetness of berries with the nuttiness of almonds in a wholesome and satisfying way. Ingredients:


Base

- 1 1/2 cups almond flour

- 1/4 cup whole wheat flour

- 1/3 cup unrefined coconut oil

- 2 tbsp pure maple syrup

- 1 tsp vanilla extract

- 1/4 tsp salt


Berry Middle

- 1 cup berries, fresh or frozen

- 1 tbsp water

- 1 1/2 tbsp pure maple syrup

- 1/2 tsp tapioca starch (as a substitute for cornstarch)


Oat Crumble Topping

- 1/2 cup oat flour

- 1/4 cup oats

- 2 tbsp almond flour

- 1/4 cup unrefined coconut oil

- 1 tbsp pure maple syrup

- 1/2 tsp vanilla extract

- Pinch of salt


Instructions:


1. Preheat the oven to 350 degrees Fahrenheit.


2. In a mixing bowl, combine almond flour, whole wheat flour, and salt for the base layer.


3. Add unrefined coconut oil, maple syrup, and vanilla extract to the dry ingredients and mix well.


4. Press the mixture into a greased or lined 8x8 baking dish and flatten evenly. Set aside.


5. For the berry layer, combine berries, maple syrup, water, and arrowroot powder in a pot.


6. Heat the berry mixture over low to medium heat, mashing the berries as they soften.


7. Let the mixture simmer and thicken for 5-10 minutes.


8. Once thickened, remove from heat and transfer to a bowl. Chill in the fridge to thicken further.


9. In a separate bowl, mix oat flour, oats, almond flour, unrefined coconut oil, maple syrup, vanilla extract, and salt for the crumble topping.


10. Remove the berry mixture from the fridge and pour it on top of the base layer. Spread evenly.


11. Top with the oat crumble topping, gently pressing it down.


12. Bake for 25 minutes or until the top is golden brown.


13. Allow to cool, then cut into squares and enjoy these healthier Berry Almond Oat Bars!
