Ingredients:


- **For the Soup:**

- 2 tablespoons olive oil

- 1 medium onion, diced

- 4 cloves garlic, minced

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- 1/2 teaspoon red pepper flakes (optional)

- 1 can (15 oz) white beans (cannellini or navy), drained and rinsed

- 4 cups vegetable broth

- 1 can (13.5 oz) coconut milk

- 1/4 cup nutritional yeast

- Salt and pepper to taste

- 1 cup uncooked lasagna noodles, broken into pieces

- 2 cups broccoli florets

- 1 cup spinach or kale (optional)

- 1/2 cup store-bought vegan Parmesan cheese


Instructions:


1. **Prepare the Soup:**

- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

- Stir in the minced garlic, oregano, basil, and red pepper flakes. Cook for another minute until fragrant.

- Add the white beans, vegetable broth, coconut milk, nutritional yeast, and store-bought vegan Parmesan. Stir well to combine. Season with salt and pepper to taste.

- Bring the mixture to a boil, then reduce the heat to a simmer. Simmer for 15 minutes.


2. **Cook the Noodles:**

- Add the broken lasagna noodles to the pot and turn the heat up to a slow boil. Cook about 8-10 minutes or until noodles are softened. Stir occasionally to prevent sticking.


3. **Add the Vegetables:**

- In the last 3-4 minutes of cooking, add the broccoli florets and optional spinach or kale. Cook until the vegetables are tender.


4. **Serve:**

- Ladle the soup into bowls. If desired, sprinkle additional vegan Parmesan on top for extra flavor.

- Garnish with fresh basil leaves if you like.
