Made with simple ingredients like plant-based milk, coconut oil, and a dash of apple cider vinegar, these waffles are not only delicious but also incredibly easy to make. The secret to their light and airy texture lies in the careful mixing of the batter—just combine until you see a few lumps, and you’re good to go! Perfectly crisp on the outside and tender on the inside, these waffles are a blank canvas for your favorite toppings. Drizzle them with maple syrup, pile on fresh berries, or even slather with nut butter for a delightful breakfast treat. Whether you're vegan or simply looking to enjoy a lighter brunch option, these waffles are sure to become a staple in your kitchen!

Ingredients:

- 1 1/2 cups unsweetened soy, coconut, or any preferred vegan milk

- 2 teaspoons apple cider vinegar

- 2 cups all-purpose flour

- 1 tablespoon baking powder

- 1/2 teaspoon sea salt

- 1 tablespoon brown sugar or maple syrup

- 1/4 cup melted coconut oil or vegan butter

- 1/2 teaspoon vanilla extract

Instructions:

1. **Prepare the Vegan Buttermilk:**

- In a small bowl or measuring cup, combine the unsweetened plant-based milk and apple cider vinegar.

- Stir gently and let the mixture sit for about 5 minutes. This will create a 'buttermilk' that adds fluffiness to the waffles.

2. **Mix Dry Ingredients:**

- In a large mixing bowl, sift together the all-purpose flour, baking powder, sea salt, and brown sugar (or maple syrup).

- Sifting is crucial for achieving light and fluffy waffles.

3. **Combine Wet and Dry Ingredients:**

- Add the melted coconut oil (or vegan butter), vanilla extract, and the prepared buttermilk to the dry ingredients.

- Using a spatula, gently mix the batter until it is just combined. It’s perfectly fine if there are a few lumps—overmixing can lead to dense waffles. The batter should be thick and easily scoopable.

4. **Preheat the Waffle Maker:**

- Turn on your waffle maker and preheat it to your desired doneness level. A medium setting is usually ideal for achieving a crispy, golden exterior while keeping the inside fluffy.

5. **Cook the Waffles:**

- Lightly grease the waffle maker if necessary. Using a 1/2 cup (125 mL) measuring cup, scoop the batter and pour it into the center of the preheated waffle maker.

- There's no need to spread the batter to the edges; it will expand as it cooks.

- Close the waffle maker and cook until the steam has completely stopped. Avoid opening the waffle maker prematurely, as this can affect the cooking process.

6. **Keep Waffles Warm:**

- Once cooked, carefully remove the waffles and place them on a baking sheet. Keep them warm in an oven or toaster oven set to "warm" or at **200°F (95°C)** while you finish cooking the remaining batter.

7. **Serve and Enjoy:**

- Serve the waffles warm with your favorite toppings, such as blueberry sauce, maple syrup, or fresh fruit. Enjoy your delicious, fluffy vegan waffles!
