These homemade vegan biscuits are light, fluffy, and melt-in-your-mouth delicious, without a hint of dairy. The secret lies in using solid coconut oil, which gives them that irresistible flakiness. Ingredients:


- 2 cups all-purpose flour

- 1 tablespoon baking powder

- 1/2 teaspoon baking soda

- 1 teaspoon salt

- 1/4 cup coconut oil (solid, not melted)

- 3/4 cup unsweetened almond milk (or any other plant-based milk)

- 1 tablespoon apple cider vinegar


Instructions:


1. **Preheat the Oven:**

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.


2. **Mix Dry Ingredients:**

In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.


3. **Prepare Coconut Oil:**

Cut the solid coconut oil into small pieces and add them to the dry ingredients. Use a pastry cutter or your hands to work the coconut oil into the flour mixture until it resembles coarse crumbs. The key to flaky biscuits is to have small chunks of solid fat (in this case, coconut oil) throughout the dough.


4. **Combine Wet Ingredients:**

In a small bowl, mix the almond milk and apple cider vinegar. Let it sit for a few minutes to create a vegan "buttermilk."


5. **Form the Dough:**

Gradually add the "buttermilk" to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the biscuits tough.


6. **Knead the Dough:**

Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough out to about 1/2-inch thickness.


7. **Cut the Biscuits:**

Use a biscuit cutter or a round cookie cutter to cut out biscuits. Place them on the prepared baking sheet. Gather any scraps, gently knead them together, and cut out more biscuits.


8. **Bake the Biscuits:**

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.


9. **Cool and Serve:**

Let the biscuits cool slightly before serving. Enjoy them warm with your favorite vegan spread or on their own!


Tips for Flaky Biscuits:

- Ensure that the coconut oil is solid and cold. If it starts to melt while working with it, you can chill the mixture in the refrigerator for a few minutes before proceeding.
