Dill Pickle Chickpea Salad is a vibrant and refreshing dish that brings a unique twist to traditional salads. It combines the hearty, protein-rich chickpeas with the tangy crunch of dill pickles, creating a delightful contrast of flavors and textures. Fresh dill and a light, creamy dressing, often based on vegan mayonnaise or yogurt, enhance the salad, infusing it with a bright, herby taste that complements the pickles perfectly. Ingredients:


  • 2 cup chickpeas, drained

  • 2 cups romaine lettuce, shredded

  • 1 avocado, chopped

  • 1/4 cup plant based unsweetened yogurt

  • 2 tbsp dijon mustard

  • 1/4 cup pickle juice

  • 2 pickles, chopped

  • 2 rib celery, chopped

  • 2 tbsp red onion, diced

  • 1 tsp garlic, minced

  • 1/4 cup fresh parsley, chopped

  • 1 tbsp fresh dill, chopped

  • Salt and Pepper to taste

Instructions:


  1. In a large mixing bowl, add yogurt, dijon mustard, pickle juice and whisk until smooth.

  2. Add the chickpeas and remaining ingredients. Toss to combine.

  3. Season with salt and pepper. Adjust ingredients as necessary to reach desired flavor.

  4. Chill for 4 hours or overnight.

  5. Enjoy!


Makes approximately 6 one cup servings.
