Ingredients:

- 1 block of extra firm tofu

- 2 tablespoons of tapioca flour (you can also use arrowroot flour or potato starch as substitutes)

- 1 tablespoon of extra-virgin olive oil (EVOO)

- 1 teaspoon of garlic powder

- 1 teaspoon of onion powder

- Salt and pepper to taste

Instructions:

1. Press the tofu: Start by pressing the block of tofu to remove excess moisture. You can do this by wrapping the tofu in a clean kitchen towel or paper towels and placing a heavy object on top for about 15-30 minutes.

2. Prepare the tofu: Once pressed, cut the tofu into bite-sized cubes.

3. Coat the tofu: In a bowl, toss the tofu cubes with tapioca flour, garlic powder, onion powder, salt, and pepper until evenly coated.

4. Air-fry the tofu: Preheat your air fryer to 400°F (200°C). Lightly brush the air fryer basket with EVOO. Place the coated tofu cubes in a single layer in the air fryer basket, making sure they are not touching each other. You may need to air fry in batches depending on the size of your air fryer.

5. Cook the tofu: Air fry the tofu at 400°F (200°C) for about 10-15 minutes, shaking the basket halfway through to ensure even cooking. The tofu should be golden brown and crispy on the outside.

6. Serve: Once the tofu is cooked, remove it from the air fryer and let it cool slightly before serving. You can garnish it with fresh herbs or serve with your favorite dipping sauce.

Enjoy your crispy air-fried tofu made with tapioca flour and EVOO!
