Ingredients:

- 2 medium sweet potatoes (about 400g)

- 1 medium red bell pepper

- 1/2 small onion

- 14 ounces silken tofu

- 1 cup full-fat coconut milk

- 1 teaspoon cumin

- 1 teaspoon smoked paprika

- ½ teaspoon cinnamon

- 2 cups chopped baby spinach

- 8 ounces pasta of choice

- Olive oil for roasting

- Salt and pepper to taste


Instructions:

1. Preheat the oven to 400°F (200°C). Peel and chop the sweet potatoes into ½ inch pieces. Roughly chop the red bell pepper and onion. Place them on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes, or until the sweet potatoes are easily mashable with a fork. Let them cool.

2. Transfer the cooled roasted vegetables to a food processor or blender. Add the silken tofu, full-fat coconut milk, cumin, smoked paprika, and cinnamon. Blend until smooth and creamy.

3. Cook the pasta according to the package instructions. Before draining, reserve at least 1 cup of pasta water.

4. In a pan, heat the sauce over medium heat for a couple of minutes, stirring occasionally. Add the chopped baby spinach and cook until wilted.

5. Add the cooked pasta to the pan with the sauce and spinach. Toss to combine. If needed, add some of the reserved pasta water to achieve the desired sauce consistency—creamy enough to coat the pasta but not too thick.

6. Season with salt and pepper to taste. Serve and savor the harmonious blend of flavors and textures.
