Ingredients:


- 4 ounces uncooked pasta of your choice

- 1 can (15 ounces) chickpeas, rinsed and drained

- ⅓ cup chopped red bell pepper

- ½ cup chopped red onion

- ½ cup chopped celery

- 1 cup cherry tomatoes, halved

- 1 cup broccoli florets, chopped

- 1 avocado, chopped

- 3 tablespoons balsamic vinegar

- 2 tablespoons mayonnaise

- 2 tablespoons plain yogurt

- ½ teaspoon black pepper

- ½ teaspoon Italian seasoning


Instructions:


1. Cook pasta according to package directions, omitting salt. Rinse under cold water until cool; drain well.

2. In a large bowl, combine pasta, chickpeas, bell pepper, celery, cherry tomatoes, broccoli, avocado and red onion.

3. In a separate small bowl, whisk together balsamic vinegar, mayonnaise, yogurt, black pepper, and Italian seasoning until well blended.

4. Pour the dressing over the salad and toss to coat evenly. Cover and refrigerate for up to 8 hours.

5. Serve chilled and enjoy!
