Ingredients:


For the "Meat":


  • 1/2 head cauliflower

  • 1/2 cup pecans

  • 1 tbsp Extra Virgin Olive Oil (EVOO) or other oil (optional)

  • 1/4 red onion

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1/4 tsp cayenne pepper (optional)

  • Salt and pepper to taste

  • Fresh squeezed lime juice

For the Toppings:


  • Romaine lettuce leaves

  • Cherry tomatoes, chopped

  • Avocado, chopped

  • Red onion, sliced

  • Red bell pepper, chopped


For the Sun-dried Tomato Hemp Seed "Cheeze" Sauce:


  • 2-3 tbsp sun-dried tomatoes

  • 1 tbsp hemp seeds

  • Up to 1/4 cup homemade cashew milk (or other plant milk)

  • 1 tbsp garlic, minced

  • 1/2 tbsp lemon juice

  • Salt and pepper to taste


Instructions:

  1. Prepare the "Meat": In a food processor, combine the cauliflower, pecans, optional oil, red onion, chili powder, garlic powder, optional cayenne, salt, and pepper. Pulse until the mixture resembles a coarse meal. Transfer to a bowl and squeeze fresh lime juice over the mixture. Adjust seasoning if necessary.

  2. Make the "Cheeze" Sauce: In a blender, combine the sun-dried tomatoes, hemp seeds, cashew milk, minced garlic, lemon juice, salt, and pepper. Blend until smooth. If the sauce is too thick, gradually add more plant milk until you achieve the desired consistency. Taste and adjust seasoning as needed.

  3. Assemble the Lettuce Boats: Take a romaine lettuce leaf and fill it with a generous spoonful of the cauliflower-pecan "meat" mixture.

  4. Add the Toppings: Top each lettuce boat with chopped cherry tomatoes, avocado, sliced red onion, and chopped red bell pepper. Feel free to customize the toppings according to your preference.
