Broccoli Salad

Broccoli salad has always been a favorite for its crunch and health benefits, but adding avocado, cucumber, red onion, red grapes, and pecans takes it to an entirely new level of deliciousness and texture. The creamy avocado pairs perfectly with the crisp broccoli and cucumber, while the red grapes add a sweet contrast that's truly irresistible. The red onion brings a slight zing, complementing the rich, buttery pecans that add both flavor and heart-healthy fats. What ties all these diverse ingredients together is the zesty lime olive oil dressing, which not only enhances the salad's freshness but also adds a vibrant citrusy note that makes every bite a delightful experience. Ingredients:


  • 1 big head broccoli, cut into florets and chopped

  • 1/2 red onion, chopped

  • 1 avocado, cubed

  • 1/2 English cucumber, cut into half moons

  • 2 cups seeded red grapes, halved

  • 1/2 cup chopped pecans

  • 1 lime

  • 1 tbsp extra virgin olive oil

  • 1/4 tsp ginger, powder

  • salt and pepper (optional)


Instructions:


  1. Prepare all produce

  2. Add broccoli, onion, avocado, cucumber, grapes and pecans to a large mixing bowl.

  3. Drizzle olive oil over salad

  4. Squeeze juice from lime over salad

  5. Sprinkle ginger on salad

  6. Toss gently to combine

  7. Season with salt and pepper to taste

  8. ENJOY!
