Ingredients:


- 4 cups sourdough bread, cubed

- 2 cups blueberries (fresh or frozen)

- 2 tablespoons ground flaxseed (equivalent to 2 large eggs)

- 1/3 cup water (to mix with flaxseed)

- 1 ½ cups coconut milk (not canned, or any non-dairy milk)

- 2-4 tablespoons maple syrup (to taste)

- 1 teaspoon vanilla extract

- 1 teaspoon ground cinnamon

- 1/4 teaspoon black salt (Kala namak- optional)

- 1/4 teaspoon nutmeg (optional)

- 1 tablespoon coconut oil (for greasing)

- 2-3 tablespoons coconut sugar (for sprinkling on top)


Instructions:


1. Prepare the Flax Eggs:

   - In a small bowl, combine the ground flaxseed with 1/3 cup of water. Stir well and let it sit for about 5-10 minutes until it thickens.


2. Prepare the Baking Dish:

   - Preheat your oven to 350°F (175°C).

   - Grease a 9x9-inch (or similarly sized) baking dish with coconut oil.


3. Combine the Ingredients:

   - In a large mixing bowl, whisk together the thickened flaxseed mixture, coconut milk, maple syrup (adjusting the amount to your desired sweetness), vanilla extract, ground cinnamon, black salt (Kala namak- if using), and nutmeg (if using).

   - Add the cubed sourdough bread to the mixture, stirring gently to coat the bread evenly.

   - Fold in the blueberries.


4. Assemble the Casserole:

   - Pour the mixture into the prepared baking dish, spreading it out evenly.

   - If desired, sprinkle a few extra blueberries on top.

   - Sprinkle 2-3 tablespoons of coconut sugar over the top.


5. Bake:

   - Bake in the preheated oven for 30-35 minutes, or until the top is golden and the casserole is set.


6. Serve:

   - Allow to cool slightly before serving. Drizzle with additional maple syrup if desired.
