A Delicious Twist: Banana Bread Baked Oatmeal

In the world of breakfast options, few things are as comforting and satisfying as a warm slice of banana bread. The aroma of ripe bananas and the sweetness of cinnamon can make anyone's morning better. But have you ever thought about combining the goodness of banana bread with the wholesome goodness of oatmeal? Just imagine banana bread baked oatmeal, a delightful fusion of flavors that will make your taste buds dance with joy. In this blog post, I'll share a simple recipe that you can easily whip up in your own kitchen.


This recipe yields one serving.


Ingredients:

- 1 medium ripe banana, divided in half

- 1/2 cup almond milk

- 1/2 tsp vanilla extract

- 1/4 tsp lemon juice

- 1/2 tsp cinnamon

- 1/4 tsp pink salt

- 1/2 tsp baking powder

- 1/4 tsp baking soda

- 1/2 cup rolled oats (ground into a flour)


Instructions:

1. Preheat the oven to 350°F (180°C) and lightly grease a baking dish (a ramekin works best) with cooking spray or oil.

2. In a mixing bowl, mash the 1/2 ripe banana until smooth. Take other half and slice into pieces. Set aside for later.

3. Add the almond milk, vanilla extract, and lemon juice to the mixing bowl and mix well.

4. In a separate bowl, mix together the ground rolled oats, cinnamon, pink Himalayan salt, baking powder, and baking soda.

5. Add the dry ingredients to the wet ingredients and mix until well combined.

6. Pour the mixture into the prepared baking dish (I like to layer the leftover sliced bananas throughout saving a few for the top).

(Optional- sprinkle with cinnamon and/or sugar on top)

7. Bake for 25-30 minutes or until the top is golden brown and the oatmeal is set.

8. Remove from the oven and let cool for a few minutes before serving.
