Ingredients:


- Ciabatta bread (sliced in half to expose inside)

- 4 tbsp extra virgin olive oil

- 1 cup silken tofu

- 3 tbsp cashew butter

- 1 1/2 tbsp lemon juice

- 3/4 cup feta cheese, crumbled and divided

- Pinch each of salt and pepper

- 2 persimmons, sliced

- 1/4 small red onion, sliced

- 1/4 cup pomegranate arils

- 4 cups arugula

- 1/4 cup sliced almonds

- Balsamic glaze (for drizzling afterward)


Instructions:


1. **Preheat the Oven:**

- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to create a perfect base for your delicious toasts.


2. **Prepare the Ciabatta:**

- Place the ciabatta halves on the prepared baking sheet, cut side up. Gently brush the surface with 2 tablespoons of the extra virgin olive oil, allowing the bread to soak in that rich flavor.


3. **Make the Tofu Feta Spread:**

- In a food processor, combine the silken tofu, cashew butter, lemon juice, the remaining 2 tablespoons of olive oil, 1/4 cup of the crumbled feta, and a pinch of salt and pepper. Blend until you achieve a smooth and creamy consistency.


4. **Assemble the Toasts:**

- Evenly spread the luscious tofu feta mixture over the ciabatta halves. Top generously with the sliced persimmons and red onion slices, allowing their sweetness to complement the savory spread.


5. **Bake:**

- Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the ciabatta is lightly browned and toasty.


6. **Finish and Serve:**
